Grilled Caprese Pizza HomemadeSummertime and grilling go hand in hand. It’s great to get outside and enjoy the weather while cooking dinner, especially when friends are involved.  I had been seeing grilled pizza on Instagram and showing up on my Yummy recommended foods and wanted to give it a try. Luckily our couple friends did too.  We scheduled a grilled pizza dinner date night!  We were very excited and started planning what types to make the week before.

We were set on a traditional pepperoni and then a caprese style with fresh mozzerella, tomato, and basil.  My husband loves mushrooms and onions so we paired that with some hot Italian sausage for another flavor. He also added hot cherry peppers to his.  Lastly I had received tons of fresh kale from my weekly farm share and I knew I had to get some greens in so we made a chicken sausage, garlic, kale pie too.

I had purchased Flat-Out Artisan Thin Pizza Crust and pizza dough figuring we can make some from scratch and then more easily make others.  I wish I had a video of my girlfriend and I trying to make crust from the dough.  We were spinning and stretching it, getting covered in flour and laughing our heads off.  We definitely were not successful in making round or even uniform thickness crusts… but maybe next time!

Grilled Pizza Directions

Pre-heat grill to high.

If you bought dough…

Remove from the bag at least 30 minutes before using and place in a mixing bowl. Sprinkle a flour coating and let it sit and rise.

Kneed and spread the dough into a crust using fingertips.  It won’t make a perfect circle but that’s okay – it gives character to your pie.

Drizzle with Extra Virgin Olive Oil and place directly on the grill.

Flip after 5 minutes.  Cook another 5 minutes then remove.

Sauce your pizza first (if using), sprinkle with cheese, then add your toppings.

Cook for ~10 minutes on the grill, until cheese is melted.

Cut & Enjoy!!

Pre-Cook These Ingredients:

Any meat – chicken, sausage, meatball, bacon

Onions – sauté, Mushrooms – sauté briefly, Kale, Broccoli, Spinach – sauté or boil

Seafood Toppings – shrimp, clams

Fun, Quick Dinner Idea

This really was a blast to do, and it was definitely easy.  With a little prep of the ingredients requiring pre-cooking the night before and using the pre-made flatbreads you can have a delicious pizza within 15 minutes!

On this particular night I cooked the sausage that night but had pre-made kale the night before.  Our sad attempts at kneading the fresh dough took the longest time!!

You can put your pizza crust directly onto the grill, or you can get a high heat pizza pan made for grills such as this one from Williams Sonoma.

If you’re feeding a few people with different tastes the artisan flatbreads are a great personal size so everyone can add only the ingredients they want and throw it on the grill.
