This may sound weird but this avocado cream sauce has been life changing! First of all, it is so quick to make this sauce. Secondly, it’s delicious of course … I wouldn’t tell you about this if it wasn’t. So fresh tasting and creamy! Lastly, the ingredients are very easy to happen to have in your fridge if your day got away from you and you didn’t plan ahead for dinner.
Prep & Cook Time:
2 avocados, skin & pits removed
1 clove of garlic
½ cup of unsweetened, unflavored almond milk
½ English Cucumber, or 1 full seedling cucumber half
Black pepper to taste
THROW EVERYTHING into your Vitamix, high power blender, or food processor.
Blend on high until creamy ~ 2 minutes

You could add more almond milk to make it thinner. Cucumber has a lot of water in it as well so this will naturally help thin the sauce.
Though creamy, this sauce is full of fresh ingredients and avocado and almond milk provide the ‘good fats’ so this is not so bad and quite healthy rather than a typical creamy sauce like alfredo.
Serve over zoodles or spaghetti squash
Serve over regular pasta, angel hair would be best
Serve over chicken or fish
Spread over thinly pounded baked chicken or veal and top with fresh arugula & tomatoes for a ‘pizza’
Keep it a little thicker and use as an accent on fresh tacos
